Washing the rice before cooking serves to obtain a more digestible and propitious food for those who have gastritis or gastroesophageal reflux problems, especially when accompanying rice to a second. When we eat rice combined with meat dishes, animal proteins are taken by the body together with starches.

This creates a strong acidity in the stomach, which is necessary for digestion and is responsible for the onset of reflux. Rice must, therefore, be washed to remove the starch from the grains. This will make the rice softer, lighter and more digestible, perfect for preparing salads, cold dishes or oriental-style dishes.
